Flan Made in a Pressure Cooker

Yup! Believe it or not, you can cook flan in a pressure cooker and it only takes 30 minutes. I learned recently during my trip to Santa Marta, Colombia, that flan takes a slightly denser consistency if cooked double boiler in a pressure cooker.
My aunt María, who is an excellent cook, prepared caramel flan and she has always been well known among my cousins for that dessert. Although I was not sure she was going to share her recipe, I asked. To my surprise, she spilled it all. I ran to my purse and took notes.
Ingredients:
- 1 can of condense milk
- 1 can of milk (measured with the can of condense milk)
- 4 eggs
- 1 teaspoon of vanilla
- 1 pinch of salt
- ½ cup of sugar
Preparation:
Add the sugar and 1 spoon of water in a pan and let it melt in low heat. Once melted, add it to the smaller recipient of the double boiler.
Add the eggs, the milk, the condense milk, and the vanilla in the blender and blend for 30 seconds in medium speed.
Proceed to add the mix into the smaller recipient of the double boiler (on top of the melted sugar).
Add to the pressure cooker and cook for 30 mins.
Set in the refrigerator for 1 hour and serve cold.
